I would tell the sudent to do 4 things:
1. Take a red pen and give herself a a big fat "A" across the front of the paper. Then tuck it away.
2. Write the sub-standard paper the professor wants and use the whole situation as the learning experience college is, without thinking any less of herself.
3. Get a copy of "The Writers Market 2006"
4. Pull out the "A" paper and present it as an article to a magazine editor listed in "The Writers Market 2006". Get it published and get paid for the article. Move on to the next class.

Tell her the story about the economics professor, who gave a "C" for a business plan written by a student named Fred Smith. Fred used that business plan to start Federal Express. http://www.referenceforbusiness.com/biography/S-Z/Smith-Fred-1944.html

Tanya,

I agree with you, I think schools need to go ahead and do away with essay types of questionssince it is so subjective, and what may be excellent work for one professor is sub-standard for another and frankly I think its ridiculous.
